Hi, I hope you’re all having a good week. Christmas is just around the corner so I thought it would be a nice idea to share one of my favourite party dips. I know there’s a lot of guacamole recipes around the internet but I still wanted to share what I do. As always, remember there are no rules. You can add anything you fancy, I often use chilli in my guacamole but didn’t have any to hand this time ’round.
Basic ingredients – 2 avocados, a small pack of tomatoes, half a red onion, lemon juice, salt, cinnamon and coriander.
Chop up as many tomatoes as you like. I’m a big fan of cherry tomatoes and tend to use about 10.
Now that the messy bit is done you can slide them straight into your serving bowl.
Slice your avocados in half. Don’t forget to carefully knock your knife into the stone and twist to remove it.
With a sharp knife score down and across the avocado.
Then scoop into your serving bowl.
Chop up half a red onion. I tend to do the onion quite chunky as I love the crunch it adds.
Slide the onion into the bowl.
The zesty bit is very important. I forgot to get limes and had to pull this lemon from the tree.
Squeeze half a lime/lemon into the mixture.
I add cinnamon to almost everything. Just a sprinkle will do.
Finely chop the coriander and carefully avoid the stalk. I use a big handful.
Give it a good mix and then it’s ready to serve.
Guacamole is a good party snack to have with crisps over the festive season. I also have it with chilli con carne, fajitas and burritos.
