Hello! Did you all have a good week? It’s been very cold, here in Norwich and I’ve had a lot of work to be getting on with. It’s been a week of simple meals and on one of the days I felt I needed something simple, warming and tasty to eat. I ended up popping a few potatoes in the oven for our evening meal.
This was the first time I’ve made them in over 4 years. I went off them back during my uni life because I always used the microwave and they just never turned out right. I don’t have a microwave these days, so cooked them the good old fashioned way and realised how delicious they can be.
Although I’m sure you all know how to bake a delicious crispy potato, I still wanted to share the 4 simple steps I took.
1 – Wash the potato and prick all over with a fork.
2 – Next you need to cover it in olive oil.
3 – Done? Right, now you want to get some chunky rock salt and spread it over the potato. I used this fancy rosemary rock salt which came in my Flavrbox
4 – Now just bob in the oven for about 50 – 60 minutes. I like the jackets extra crispy so they stay in for about 70 minutes.
Carefully remove from the oven and cut them in half so they can cool a little.
Fill with your favourite filling and enjoy.
